Cooking Can Be Simple If You Use This Advice


There are a lot of people who are becoming interested in cooking at home these days as opposed to going out. Yet the biggest problem a lot of people face is they don't know where to start when it comes to home cooking; what you have to do is learn as much as you can about home cooking and from there apply all that you know in order to see successful results.

Ensure that you are getting the most out of your chef's knife by holding it properly during use. The thumb and the index finger should be on either side of the blade, at the point where it meets the handle. This will give the ultimate in control, when slicing through ingredients.

Ensure that your baked fish is moist and tender by cooking "en papillote". This is a French technique that refers to fish baked in a parchment-paper packet. Place the fish and vegetables of your choice in the center of a large piece of parchment-paper. Bring the edges of the paper together, crease them tightly to form a seal, and bake for 10 to 15 minutes at 450 degrees. The fish and vegetables steam in the packet, keeping them moist and tender, and creating a tasty, healthy dish. (Clean-up is just as easy - simply throw away the paper after eating!)

For the moistest banana bread ever, peel and then freeze the bananas slated for the next loaf. Bananas placed in a covered container in the freezer will absorb moisture from the freezing process and that little extra "juice", goes a long way. Not only will your bread be more moist, it will also have a more intense banana flavor.

Cooked turkey freezes beautifully, as does stuffing. When making a big holiday meal, be sure and make plenty so you not only have enough for turkey sandwiches, but to enjoy another turkey dinner in a month or two, without all of the work. Use a spare 9" X 13" pan that you line and divide with aluminum foil into two or three compartments. Cut some turkey for one compartment, add some stuffing in another and if you would like, leftover mashed potatoes can be put in the third compartment. Drizzle some gravy over everything you desire, cover with aluminum foil and freeze. When ready to enjoy turkey again, or perhaps when pressed for time and out of ideas for dinner, grab the pan from the freezer and place in the oven at 350 degrees. Remove the foil from the top of the pan after 45 minutes, bake uncovered for another 15 to 20 minutes and enjoy!

Use either a steaming or a stir-frying technique to cook your vegetables. These two methods help the vegetables retain both their color and their nutrients, providing your family with a healthier side dish that also looks attractive. Your children, in particular, are more likely to eat their vegetables if they look nice.

When picking out a melon for purchase, make sure that it is still fresh. Many times, people get sick from melons that have gone bad. You can check its freshness by checking the part of the melon that was connected to the vine. If it is soft, then the melon is still good.

If you plan on using fresh herbs, like parsley or dill in your food, form them into bunches and cut them with scissors. This chopping method produces lighter, fluffier herbs that are drier than conventionally cut herbs.

If you have left over wine in a bottle from dinner or drinks with friends, you can pour out the remaining wine in an ice tray and put it in the freezer. When you are making a sauce that has wine in the recipe you can drop in a couple of cubes.

If you are sauteing vegetables and require more oil, add the oil to the outer part of the pan. This way the oil is heated by the time it reaches your vegetables. By doing this you eliminate extra cooking time and you never have to worry about your vegetables getting soggy or getting splattering hot oil.

Use a paper towel to blot moisture off of any ground meat before you put it in the pan to cook. It is a good idea to always blot away the moisture. Leaving it can cause the liquid to release when cooking. This creates a sizzle on the surface of the meat. This will make the meat steam, instead of sear like you will want it to.

Check your meatloaf or meatballs by test cooking a small piece. You want your meat to taste perfect, so when you make a mini hamburger patty, and fry it up to taste it, you can decide if the seasoning is just right or if you need to add more flavor. Doing this ensures your meatloaves and meatballs are perfect when you pop them out of the oven.

If a dish requires thinly sliced meats (like some Chinese dishes, for example), freeze the meat before slicing. This makes it hold its shape better when you are slicing, which allows the knife to cut through with a cleaner line. When meat is thawed out, you often have to use a sawing motion to cut the beef, which can make your lines uneven and jagged.

Campsite cooking can be a breeze if you take along the right tools. Keep your campsite cooking utensils all washed up and stored away ready to go anytime the urge hits you. You can cook anything on a campfire that you cook at home so just plan accordingly. Don't forget a Dutch oven for the baking and the coffee pot for that morning cup of Joe!
